Ask any Indian parent what a healthy tiffin box looks like and the answers follow a predictable pattern.
Roti. Sabzi. Some dal if there is a thermos. Maybe fruit. For older children, perhaps a sandwich on brown bread. The thinking behind it is consistent: lean, light, not too heavy for school hours, easy to digest.
It is also, nutritionally speaking, systematically low in fat. And that gap quiet, unintentional, accumulated over years of school lunches matters far more than most parents realise.
The Number That Reframes Everything
Children need more fat, per kilogram of body weight, than adults. Not slightly more. Significantly more.
An adult eating a 2,000-calorie diet gets adequate nutrition from roughly 20–35% of calories from fat the standard dietary guideline range. For children between the ages of 1 and 3, the recommended fat intake is 30–40% of total calories. For children between 4 and 18, it is 25–35%. These ranges exist because fat is not optional infrastructure for a growing child. It is load-bearing.
The brain, as established, is nearly 60% fat. But beyond the brain, consider what else a child’s body is building simultaneously: the myelin sheaths around every nerve in their body, the cell membranes of trillions of rapidly dividing cells, the fat-soluble vitamin stores that regulate bone development, immune function, and hormonal precursors. Every one of these processes depends on a reliable, daily supply of quality fat.
Yet the structure of the average Indian school meal heavy on complex carbohydrates, moderate on protein, light on fat routinely under-delivers on this. Not because Indian food is unhealthy. Because the particular way we have been taught to think about children’s food has quietly filtered fat out of it.
Where the Low-Fat Bias Came From
In the 1980s and 1990s, a global dietary shift happened. Fat was identified as the villain behind heart disease, and low-fat became synonymous with healthy eating across the world. That messaging reached India it shaped what was taught in schools, what doctors recommended, and what mothers packed in tiffin boxes.
The science has substantially moved on since then. The original research linking dietary fat to heart disease has been repeatedly challenged, and the consensus now is considerably more nuanced: the type of fat matters enormously, and dietary fat particularly from whole food sources is not the cause of the health problems it was blamed for.
But the cultural residue remains. The instinct to keep children’s food light. The preference for low-fat dairy. The sense that a meal heavy in fat is somehow indulgent or inappropriate for a school day. These are not based on current nutritional science. They are inherited from a decades-old dietary panic that has largely been revised.
The result is a generation of Indian children eating high-carbohydrate, moderate-protein, low-fat diets and parents who feel virtuous about packing that brown bread sandwich, not realising the child’s brain and nervous system are quietly asking for something different.
What a Typical Indian School Meal Actually Delivers
Take a fairly standard, well-intentioned tiffin across age groups:
A 7-year-old might have two rotis with a dry sabzi, a small cup of curd, and a banana. The fat in this meal comes almost entirely from the trace amounts in the roti flour, whatever oil the sabzi was cooked in, and the fat in the curd likely low-fat if the parent is health-conscious. Total fat: perhaps 8–12 grams. For a child who needs 40–55 grams of total fat per day across all meals, that tiffin is delivering roughly 20% of the daily requirement in what is often the largest meal of the active school day.
A 10-year-old might have brown bread sandwiches with a vegetable filling, a fruit, and a juice box. Fat content: minimal. The brown bread delivers more fibre than white, which is genuinely good but fibre does not substitute for fat. The brain that child is trying to focus with through the afternoon school session is running on glucose from the bread and very little else.
The evening snack often biscuits, puffed rice, or a packaged healthy bar adds carbohydrates and some protein. Fat again is minimal, and what exists is typically from refined vegetable oil.
Dinner at home tends to be the most nutritionally complete meal of the day. But a child cannot run on one good meal. The brain does not operate on a deficit-and-catch-up model. It needs consistent input across the day.
The Cooking Oil Is the Easiest Lever to Pull
Here is what makes this problem more solvable than it sounds.
You do not need to overhaul the tiffin. You do not need expensive supplements or specialty foods. The single highest-leverage change available to most Indian families is the quality of fat already present in every meal the cooking oil.
The roti is already being made. The sabzi is already being cooked. The dal is already being tempered. Every one of these involves oil. If that oil is a refined, nutrient-stripped product, it is delivering calories and nothing else. If it is a genuinely cold-pressed oil wood-pressed coconut, sesame, groundnut, or sunflower it is delivering intact fatty acids, fat-soluble vitamins, and antioxidants alongside those same calories.

Polyunsaturated fats, specifically omega-3s found in fatty fish, walnuts, flaxseed, and to some extent sesame are the most important and most commonly deficient. DHA, the omega-3 most directly linked to brain development, is almost entirely absent from the typical Indian school diet unless fish is eaten regularly. This is the one genuine gap that may warrant an additional source a small daily serving of walnuts, a few seeds added to food, or fish twice a week where dietary preference allows.
Trans fats and damaged polyunsaturated fats found in refined oils that have been through high-heat industrial processing, in packaged biscuits, namkeen, and most commercial fried snacks are the only category to actively reduce. Not because fat is bad, but because these specific forms are structurally damaged and do not serve the same function as intact fatty acids.
The Practical Tiffin Adjustment
A few additions that meaningfully improve the fat quality of a school tiffin without requiring a complete redesign:
Cook the sabzi and dal in a wood-pressed oil rather than refined this alone upgrades the fat quality of every cooked element in the box.
Add a small portion of full-fat curd rather than low-fat. The fat in whole dairy supports fat-soluble vitamin absorption from everything else in the meal.
A handful of mixed nuts or seeds four to five walnuts, a teaspoon of pumpkin seeds or sesame seeds mixed into curd or sprinkled on a dish adds meaningful omega content without changing the meal structure.

The Question Worth Asking Differently
The conversation around children’s nutrition in India tends to orbit around what children are not eating enough of vegetables, protein, iron, calcium. These conversations are valid.
But there is a parallel question that rarely gets asked: is this child eating enough fat, and is the fat they are eating actually doing the job fat is supposed to do?
For most Indian school children, the honest answer to both parts of that question is no.
The fix does not require a dramatic intervention. It requires recognising that the cooking medium is not neutral that the oil in the pan is either contributing to a child’s nutritional needs or it is not and making a deliberate choice accordingly.
That is a smaller decision than the school you chose. The hobby class you researched. The milk brand you compared.
And it happens every time you cook.
